  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Cajun seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh chopped parsley, for garnish

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente (9-11 minutes). Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Sear seasoned chicken strips for 8-10 minutes until golden and fully cooked.
  3. In the same skillet, melt another tablespoon of butter. Sauté minced garlic, then add heavy cream and milk, stirring in cheeses until melted and smooth.
  4. Toss cooked rotini into the Alfredo sauce, adding reserved pasta water if needed.
  5. Prepare the Cajun butter drizzle by melting remaining butter and mixing in Cajun seasoning.
  6. Serve the cheesy rotini topped with chicken and drizzle with Cajun butter.
