  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 12 oz bowtie (farfalle) pasta
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 2 tbsp fresh parsley or chives, chopped (for garnish)

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente (10-11 minutes). Drain and set aside.
  2. In a bowl, season chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Heat olive oil and 2 tbsp butter in a skillet over medium-high heat. Sear chicken until golden brown (8-9 minutes total), adding minced garlic in the last minute. Remove and set aside.
  4. In the same skillet, melt remaining butter; add garlic and sauté briefly.
  5. Pour in heavy cream and chicken broth; bring to a simmer.
  6. Stir in cream cheese until melted, then add Velveeta, mozzarella, and Parmesan cheeses until smooth.
  7. Toss cooked pasta into the sauce; mix well to coat.
  8. Serve by plating pasta on one side and chicken bites on the other; drizzle with extra sauce.
