Ingredients

Scale
  • 8 tablespoons unsalted butter
  • ½ cup water
  • ½ cup whole milk
  • ¼ teaspoon salt
  • 2 teaspoons sugar
  • 1 cup all-purpose flour
  • 4 large eggs (room temperature)
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine butter, water, milk, salt, and sugar over medium heat until bubbling.
  3. Add flour all at once; stir vigorously until dough pulls away from pan sides. Cook for an additional 1–2 minutes.
  4. Transfer dough to a mixing bowl to cool slightly. Beat eggs in a separate bowl; gradually add into the dough until fully incorporated.
  5. Pipe 2-inch mounds onto the prepared baking sheet and bake for 20 minutes without opening the oven door. Reduce temperature to 350°F (175°C) and bake for another 10 minutes until golden brown.
  6. Let cool completely on a wire rack before whipping cream with vanilla and sugar until stiff peaks form. Fill cooled puffs with whipped cream and dust with powdered sugar before serving.
