  • 2 cups fresh or frozen strawberries, hulled and halved
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon orange zest
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, mix cranberries, strawberries, sugar, cornstarch, orange zest, and vanilla extract until well coated. Pour into the prepared baking dish.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Stir in egg and orange zest to form a soft dough.
  4. Drop spoonfuls of dough over the fruit mixture. Sprinkle coarse sugar on top if desired.
  5. Bake for 35–40 minutes until golden brown on top and bubbling around the edges. Cool slightly before serving.
