  • ½ cup buttermilk
  • ½ cup canola oil
  • ½ cup orange juice
  • 2 large eggs
  • 1 ½ cups fresh cranberries
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt; whisk together.
  3. In another bowl, whisk buttermilk, canola oil, orange juice, eggs, vanilla extract, and orange zest until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until combined; add cranberries and mix carefully.
  5. Pour batter into a greased loaf pan and bake for 60-75 minutes until a toothpick comes out clean.
  6. While baking, prepare the glaze by mixing powdered sugar with orange juice until smooth.
  7. After baking, cool in the pan for 10 minutes before transferring to a wire rack and drizzle with glaze.
