  • 1 packet (1 ounce / 3 tablespoons) dry ranch seasoning mix
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt
  • ½ teaspoon dried oregano
  • ¼ teaspoon pepper
  • 6 cups (48 ounces) chicken broth
  • 1 cup (185 g) long-grain white rice, uncooked
  • 2 cups (280 g) rotisserie chicken, shredded and cubed
  • 4 ounces (½ package) cream cheese, softened
  • Fresh parsley, for garnish

Instructions

  1. In a large pot over medium heat, melt olive oil and butter. Add diced onion, carrots, and celery; sauté until softened (about 8-10 minutes). Stir in minced garlic for an extra minute.
  2. Mix in ranch seasoning, basil, salt, oregano, and pepper; stir well.
  3. Pour in chicken broth and bring to a boil.
  4. Reduce heat to medium-low; add uncooked rice and stir thoroughly.
  5. Allow the soup to simmer for 20-25 minutes until rice is tender.
  6. Stir in shredded rotisserie chicken and cream cheese until melted and combined.
  7. Serve hot, garnished with fresh parsley.
