  • 1 tablespoon vegetable oil
  • 1 small yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 1 teaspoon garlic, minced
  • 2 pounds ground beef
  • 2 large eggs, beaten
  • 1 cup canned pinto beans, drained and rinsed
  • ½ cup plain breadcrumbs
  • 1 cup BBQ sauce, divided
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne
  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Preheat your oven to 350°F. Lightly spray a large loaf pan with nonstick cooking spray and set aside.
  2. In a medium skillet over medium heat, add vegetable oil. Once hot, add the onion and green bell pepper. Sauté until softened, about 4–5 minutes. Add minced garlic and cook for an additional minute. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the cooled vegetables with ground beef, eggs, pinto beans, breadcrumbs, ½ cup of BBQ sauce, chili powder, salt, cayenne, and black pepper. Mix gently but thoroughly until just combined.
  4. Transfer half of the meat mixture to your prepared loaf pan. Shape it into a flat loaf in the center and create a shallow trench down the middle. Sprinkle shredded cheese into the trench.
  5. Top with remaining meat mixture, pressing gently over cheese and sealing edges. Shape into an even loaf.
  6. Brush ¼ cup of remaining BBQ sauce over the top of the meatloaf and reserve the rest.
  7. Bake in preheated oven for 40 minutes before brushing with remaining BBQ sauce.
  8. Return meatloaf to the oven and bake for an additional 25–30 minutes or until internal temperature reaches 160°F.
  9. Allow meatloaf to rest for 5 minutes before slicing and serving.
