  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 2 medium carrots, diced
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 15 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 4 cups chicken broth
  • 15 oz can Great Northern beans, rinsed and drained
  • 15 oz can Kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoon fresh basil, chopped

Instructions

  1. In a Dutch oven over medium heat, heat olive oil and sauté ground beef until cooked through. Drain excess fat.
  2. Add carrots, onion, celery, and garlic to the pot; sauté for about 3–4 minutes until softened.
  3. Stir in diced tomatoes and tomato sauce along with the cooked beef.
  4. Add chicken broth and both types of beans; stir well and simmer for about 10 minutes.
  5. Incorporate ditalini pasta, Italian seasoning, salt, and pepper; bring to a simmer and cook for another 10 minutes.
  6. Stir in fresh basil just before serving.
