  • 4 garlic cloves (minced)
  • 1 large yellow onion (sliced)
  • 2 (28 oz) cans San Marzano peeled tomatoes (do not drain)
  • 1 cup chicken stock (or vegetable stock)
  • 1 tablespoon sugar
  • 1/4 cup heavy cream (or plant-based alternative)
  • 8 large fresh basil leaves (roughly chopped)
  • Kosher salt and black pepper to taste
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium-high heat. Sauté minced garlic for about 30 seconds until fragrant. Add sliced onion and cook for around 8 minutes until translucent.
  2. Stir in the San Marzano tomatoes (with juice), chicken stock, and sugar. Bring to a low simmer and cook uncovered for about 12 minutes until slightly thickened.
  3. Mix in the heavy cream, basil, oregano, and crushed red pepper flakes. Season with salt and pepper to taste.
  4. Blend until smooth using an immersion blender or a regular blender (allow cooling slightly before transferring).
