  • ½ cup granulated sugar
  • 2 large eggs
  • 1 ½ cups semi-sweet chocolate chips
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. Blend instant coffee into a fine powder using a food processor.
  3. In a medium bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and powdered coffee.
  4. In a large bowl, combine melted butter, brown sugar, granulated sugar, vanilla extract, and eggs; whisk until smooth.

  6. Scoop dough onto prepared sheets (six per sheet) and optionally top with extra chocolate chips.
