  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line or grease a muffin tin.
  2. In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine melted butter, milk, eggs, and vanilla; whisk until combined.
  4. Pour wet ingredients into dry ingredients and mix gently until just combined.
  5. For the streusel, combine flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  6. Fill each muffin tin about two-thirds full with batter and sprinkle with streusel.
  7. Bake for 18–22 minutes until a toothpick comes out clean; cool briefly before transferring to a wire rack.
