  • 1 inch fresh ginger (peeled and grated)
  • 3 cloves garlic (minced)
  • 1 tablespoon red curry paste
  • 6 cups vegetable broth
  • 1 tablespoon maple syrup
  • 1 stalk lemongrass (cut into chunks)
  • ¼ cup soy sauce
  • 8 ounces shiitake mushrooms
  • 2 cans coconut milk (15 ounces each)
  • 1 block firm tofu (pressed and diced)
  • 3 tablespoons lime juice
  • Cilantro and green onion for garnish

Instructions

  1. In a large pot over medium heat, melt coconut oil. Sauté grated ginger and minced garlic for about two minutes until fragrant. Stir in red curry paste and cook for another minute.
  2. Add vegetable broth, maple syrup, lemongrass chunks, and soy sauce; bring to a boil before reducing to a simmer for ten minutes.
  3. Incorporate shiitake mushrooms, coconut milk, and cubed tofu; simmer gently for three more minutes until heated through.
  4. Remove from heat and stir in fresh lime juice; discard lemongrass before serving.
  5. Serve hot, garnished with chopped green onions and cilantro.
