  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp chili powder (optional)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup chicken broth or water
  • 1 tsp sugar

  1. Chop the onion, mince the garlic, and grate the ginger. Cut the chicken into bite-sized pieces.
  2. In a large skillet, heat vegetable oil over medium heat. Sauté onion until translucent, about 5 minutes.
  3. Add minced garlic and grated ginger; cook for another minute until fragrant.
  4. Stir in curry powder, turmeric, ground cumin, and chili powder (if using). Cook for about 2 minutes.
  5. Add chicken pieces to the skillet; cook until browned on all sides (about 5-7 minutes).
  6. Pour in coconut milk and chicken broth; bring to a simmer and cook for 15-20 minutes on low heat until chicken is fully cooked.
  7. Adjust seasoning with sugar if needed. Serve hot with garlic naan and golden fries.
