  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 4 oz turkey strips, chopped
  • 1 can cannellini beans
  • 1 28 oz can whole plum tomatoes
  • Handful of basil
  • 2 bay leaves
  • 1 tbsp oregano
  • 3/4 cups ditalini pasta
  • 4 cups chicken broth
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 bag spinach, chopped

Instructions

  1. In a large pot, sauté turkey strips over medium heat until crispy, about 8 minutes. Add olive oil, carrots, celery, and onion; sauté for another 10 minutes.
  2. Create a well in the center of the vegetables and add tomato paste. Let caramelize for about 3 minutes before mixing.
  3. Pour in crushed tomatoes along with basil, bay leaves, and remaining seasonings. Bring to a gentle simmer.
  4. Add chicken broth and parmesan rind; return to boil before reducing heat to simmer for about 15 minutes.
  5. Stir in cannellini beans and ditalini pasta; cook for an additional 15 minutes until pasta is tender.
  6. Finally, stir in spinach; cover for an additional 3 minutes until wilted.
