  • 1 medium onion (finely chopped)
  • 2 large eggs
  • 3/4 cup milk
  • 3/4 cup breadcrumbs (preferably Panko)
  • 3 cloves garlic (minced)
  • 1/4 cup ketchup
  • 2 tbsp fresh parsley (finely chopped)
  • 1 tsp Worcestershire sauce (optional)
  • Seasonings: salt
  • black pepper
  • Italian seasoning

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with cooking spray.
  2. In a large mixing bowl, combine ground beef, chopped onion, eggs, milk, breadcrumbs, minced garlic, ketchup, parsley, Worcestershire sauce (if using), salt, pepper, and Italian seasoning. Mix until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. For the glaze, mix together remaining ketchup, brown sugar, white vinegar, garlic powder, and onion powder; brush half over the meatloaf.
  5. Bake for 45 minutes; brush with remaining glaze and bake for an additional 15–30 minutes until cooked through (internal temperature should reach 160°F or 71°C).
  6. Let rest for 10–15 minutes before slicing and serving.
