  • 410 grams all-purpose flour, sifted
  • Extra all-purpose flour, for dusting
  • 7 grams instant yeast
  • 4 tablespoons granulated sugar
  • 0.5 teaspoon fine salt
  • 2 large eggs, beaten
  • 60 millilitres fresh warm milk
  • 80 millilitres warm water (43°C)
  • 3 tablespoons melted butter or margarine
  • Softened butter or margarine, for filling and topping
  • Granulated white sugar, for coating

Instructions

  1. Activate the yeast by mixing warm water, yeast, and 1 teaspoon of sugar. Let it sit until foamy.
  2. In a large bowl, whisk together flour, remaining sugar, and salt.
  3. Combine the activated yeast mixture with beaten eggs, warm milk, and melted butter into the dry ingredients.
  4. Knead on a floured surface for about 10 minutes until smooth.
  5. Place dough in an oiled bowl to rise for about an hour until doubled in size.
  6. Divide the dough and roll each piece into rectangles; brush with softened butter.
  7. Roll tightly into logs, twist into spirals, and place them in greased moulds.
  8. Let rest for 30 minutes before baking at 165°C (329°F) for about 20 minutes until golden brown.
  9. Cool completely and coat with softened butter followed by granulated sugar.
