  • 1 cup unsweetened almond or oat milk

  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1½ cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • 4 tablespoons melted vegan butter (for cinnamon swirl)
  • ⅓ cup light brown sugar (for cinnamon swirl)
  • 2 tablespoons cinnamon (for cinnamon swirl)
  • ¾ cup powdered sugar (for frosting)
  • 2 tablespoons melted vegan butter (for frosting)
  • 2 oz softened vegan cream cheese (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
  3. Add baking powder, baking soda, cinnamon, salt, flour, and oats; stir until combined.
  4. Pour half of the batter into the loaf pan.
  5. In another bowl, mix melted vegan butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
  6. Add remaining batter on top and finish with the rest of the cinnamon swirl mixture.
  7. Bake for 50–60 minutes until a toothpick comes out clean.
  8. Cool completely before frosting with combined powdered sugar, melted vegan butter, and softened vegan cream cheese.
