  • 4 small ripe bananas (500g)
  • ⅔ cup (145g) brown sugar
  • 1 cup (250ml) thickened cream
  • 1 cup (250ml) milk
  • 10g glucose syrup
  • ¼ teaspoon vanilla extract
  • ½ cup (100g) semi-sweet chocolate
  • 2½ teaspoons (10g) refined coconut oil
  • 1 cup (100g) walnut pieces

Instructions

  1. Prepare chocolate chunks by melting chocolate with coconut oil, then pour into a container to set. Chop into chunks once firm.
  2. Slice bananas and sauté until golden. Sprinkle with brown sugar and caramelize, then let cool.
  3. Heat milk, cream, and glucose syrup until simmering. Let cool slightly before blending with caramelized bananas until smooth. Add vanilla and salt; refrigerate for at least 4 hours.
  4. Churn the mixture in an ice cream machine until it reaches soft-serve consistency.
  5. Fold in chocolate chunks and walnuts before transferring to a container for freezing.
