3 very ripe bananas
2 large handfuls baby spinach
3 tablespoons milk (almond or regular)
1 egg
½ cup sugar
1 teaspoon vanilla extract
½ cup Greek yogurt (full fat)
3 tablespoons oil
1 cup white whole wheat flour
1 teaspoon baking soda
⅔ cup cocoa powder
¼ teaspoon sea salt
½ cup dark chocolate chips
Instructions
Preheat your oven to 350°F.
In a high-powered blender, combine milk, ripe bananas, and spinach until mostly smooth. Transfer to a mixing bowl.
Mix in the egg, sugar, vanilla extract, oil, and Greek yogurt until well combined.
In a separate bowl, whisk together flour, baking soda, sea salt, and cocoa powder. Gradually fold this dry mixture into the wet ingredients until just combined.
Gently stir in chocolate chips.
Line a muffin pan with liners and fill each about three-quarters full with batter. Top with additional chocolate chips if desired.
Bake for 18-22 minutes or until a toothpick comes out clean. Allow to cool before enjoying.
