  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt (full fat)
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • ⅔ cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F.
  2. In a high-powered blender, combine milk, ripe bananas, and spinach until mostly smooth. Transfer to a mixing bowl.
  3. Mix in the egg, sugar, vanilla extract, oil, and Greek yogurt until well combined.
  4. In a separate bowl, whisk together flour, baking soda, sea salt, and cocoa powder. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Gently stir in chocolate chips.
  6. Line a muffin pan with liners and fill each about three-quarters full with batter. Top with additional chocolate chips if desired.
