  • 55 grams unsalted butter (softened)
  • 180 grams powdered sugar (for frosting)
  • 45 grams heavy cream
  • 65 grams creamy peanut butter
  • 85 grams dark chocolate (70% cacao, melted)
  • 20 grams crushed pretzels

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Sift together the almond flour, powdered sugar, and cocoa powder in a medium bowl.
  3. In a stand mixer, whip the egg whites until foamy, then gradually add granulated sugar while increasing speed until stiff peaks form.
  4. Gently fold in the sifted dry ingredients until reaching a lava-like consistency.
  5. Pipe 1.5-inch rounds on parchment-lined baking sheets.
  6. Bake for 18-20 minutes, rotating halfway through for even baking.
  7. Allow to cool before transferring to a wire rack.
