  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips (or melted chocolate for dipping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with a fork.
  6. Bake for 9–11 minutes or until edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. Once cooled, dip half of each cookie in melted chocolate or drizzle on top and sprinkle with flaky sea salt if desired.
