  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • 12 oz semisweet chocolate, melted and cooled
  • 1/4 cup powdered sugar
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine chocolate cookie crumbs and melted butter until mixed. Press into the bottom of the pan to form the crust and bake for 10 minutes. Let cool.
  3. Beat softened cream cheese until smooth; add sugar and vanilla extract until combined. Whip heavy cream until stiff peaks form and fold into the chocolate mixture.
  4. Pour filling over cooled crust and refrigerate for at least 4 hours or overnight to set.
  5. Dust with powdered sugar and cocoa powder before serving.
