  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ of a 14 oz can sweetened condensed milk
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing after each addition, then stir in vanilla.
  4. Gradually mix in cocoa powder, salt, baking soda, baking powder, and flour until combined.
  5. Roll the dough into 1-inch balls and place them on prepared sheets; press your thumb into each to create a well.
  6. Bake for about 12 minutes; if thumbprints disappear, gently press down again after cooling for two minutes on the sheet.
  7. For the filling, melt white chocolate chips and condensed milk over medium heat in a saucepan; stir in mint extract once smooth.
  8. Spoon the mint fudge filling into cookie centers and drizzle melted chocolate almond bark over cooled cookies.
