Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 12 tbsp heavy cream or milk
  • 1/2 tsp peppermint extract
  • 12 drops green food coloring (optional)
  • 1/2 cup heavy cream
  • 4 oz semi-sweet or dark chocolate, chopped
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch or 9×9-inch baking pan with parchment paper.
  2. Melt the unsalted butter; mix it with granulated sugar until well combined. Add eggs one by one, then stir in vanilla extract.
  3. Incorporate cocoa powder, flour, salt, and baking powder into the mixture until just combined. Spread evenly in the prepared pan and bake for 25–30 minutes. Let cool completely.
  4. For the mint layer, beat softened butter until creamy, gradually add powdered sugar, peppermint extract, and heavy cream until fluffy. Spread over cooled brownies and chill for 15-20 minutes.
  5. Prepare the ganache by heating heavy cream until simmering; pour over chopped chocolate and stir until smooth. Add butter for glossiness.
  6. Pour ganache over the mint layer and chill for at least 1 hour before slicing.
