  • 1 cup firmly packed brown sugar

  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 1/2 teaspoons vanilla extract

  2. In a bowl, whisk together flour, cornstarch, baking soda, and sea salt.
  3. Beat the cooled butter with both sugars until well combined.
  4. Add the egg, egg yolk, and vanilla; mix until smooth.
  5. Gradually stir in the dry ingredients until just combined.
  6. Chill the dough for at least one hour in the refrigerator.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Portion out dough into balls and place them on prepared sheets about two inches apart.
  9. Bake for 8 to 10 minutes until golden brown; let cool on sheets briefly before transferring to wire racks.
