  • Salt & pepper, to taste
  • 1 cup uncooked white rice (e.g., basmati or jasmine)
  • 1 cup water
  • Pinch of salt
  • 1 cup broccoli florets
  • Pinch of salt

Instructions

  1. Rinse rice until water runs clear. In a pot, combine rice, 1 cup water, and a pinch of salt. Bring to a boil; cover and simmer for 12-15 minutes until fluffy.
  2. Heat olive oil in a non-stick skillet or wok over medium-high heat. Add chicken strips and cook for 5-6 minutes until golden.
  3. Add carrots, red bell pepper, garlic powder, dried herbs, salt, and pepper to the pan. Stir-fry for another 3-4 minutes until veggies are tender-crisp.
  4. Steam broccoli in a steamer basket over boiling water for 4-5 minutes until bright green and tender.
  5. Serve the chicken stir-fry alongside fluffy rice and steamed broccoli.
