  • 2 cups cooked chicken breast, shredded
  • 2 cups shredded Mexican blend cheese
  • 4 large flour tortillas
  • 2 tablespoons butter
  • 1/2 cup mayonnaise
  • 2 tablespoons pickled jalapeño juice
  • 2 teaspoons minced pickled jalapeños
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt, to taste

Instructions

  1. In a small bowl, mix all the creamy jalapeño sauce ingredients until smooth. Set aside.
  2. Heat a non-stick skillet over medium heat and melt butter.
  3. Place a tortilla in the skillet and spread with 1–2 tablespoons of the jalapeño sauce.
  4. Add shredded chicken on one half of the tortilla and top with shredded cheese.
  5. Fold the tortilla over and cook for 2–3 minutes per side until golden brown and cheese is melted.
  6. Slice into wedges and serve with extra jalapeño sauce.
