  • 1 ¼ lb boneless chicken breasts (sliced)
  • 3 bell peppers (thinly sliced)
  • 1 medium yellow onion (thinly sliced)
  • 2 Tablespoons olive oil
  • 3 cloves garlic (minced)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • Juice from one lime (about 2 Tablespoons)
  • 8 flour or corn tortillas

Instructions

  1. Combine all seasoning ingredients in a small bowl; set aside.
  2. Heat 1 Tablespoon of olive oil in a cast iron skillet over medium heat. Sauté bell peppers and onions for 5-7 minutes until softened; add minced garlic and half the seasoning mixture. Cook for an additional 2-3 minutes.
  3. In the same skillet, add remaining oil and chicken strips. Sprinkle with leftover seasoning and lime juice; cook for 5-6 minutes until chicken is cooked through.
  4. Return sautéed vegetables to the skillet; stir to combine and heat through for another 1-2 minutes.
  5. Serve in warm tortillas with desired toppings.
