  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • Ladyfingers
  • Cocoa powder for garnishing
  • Fresh cherries

Instructions

  1. In a mixing bowl, beat together mascarpone cheese and heavy cream until smooth and fluffy.
  2. Mix in cherry juice, vanilla extract, sugar, and cherry preserves until well combined.
  3. Fold in chopped fresh cherries gently.
  4. Quickly dip ladyfingers in equal parts cherry juice and water (or almond extract) to soak lightly.
  5. Layer soaked ladyfingers in a baking dish followed by half of the mascarpone mixture. Repeat with remaining ladyfingers and mascarpone.
  6. Refrigerate for at least 4 hours or overnight.
  7. Before serving, dust with cocoa powder and sprinkle shaved dark chocolate on top.
