  • 1 medium onion
  • 3 cloves garlic
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ¼ cup breadcrumbs
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, sauté chopped onion in olive oil until soft. Add minced garlic and cook until fragrant. Gradually add spinach until wilted; drain excess liquid.
  3. In a mixing bowl, combine ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, and beaten eggs.
  4. Fold the cooled spinach mixture into the cheese mixture and transfer to the baking dish. Sprinkle breadcrumbs on top.
  5. Bake for 25–30 minutes until golden brown and bubbly. Let cool for 5 minutes before serving.
