  • 12 oz twisted pasta (such as gemelli or fusilli)
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 8 oz Velveeta cheese, cubed
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and freshly cracked black pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Cook the twisted pasta in boiling salted water for about 9–10 minutes until al dente. Reserve ½ cup of the pasta water, then drain and set aside.
  2. Toss chicken chunks with olive oil, Cajun seasoning, garlic powder, and smoked paprika.
  3. Sauté the chicken in a skillet over medium-high heat for 6–8 minutes until fully cooked.
  4. In the same skillet, melt butter, add minced garlic, and sauté briefly.
  5. Whisk in flour to form a roux before gradually adding milk, whisking until thickened.
  6. Lower heat and add Velveeta and cream cheese until melted; stir in mozzarella and Parmesan cheeses.
  7. Combine the cooked pasta and chicken into the sauce, adjusting with reserved pasta water if necessary.
  8. Serve hot with optional garnishes like fresh parsley or chives.
