  • 3 large garlic cloves
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon Aleppo pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup slivered almonds
  • 1 bunch celery (about 10 to 12 stalks, thinly sliced)
  • 3 scallions (thinly sliced)
  • 1/3 cup chopped fresh mint leaves

Instructions

  1. To make the dressing, mince the garlic cloves and combine them in a medium bowl with Greek yogurt, lemon juice, olive oil, Aleppo pepper, salt, and black pepper. Whisk until well blended.
  2. In a dry skillet over medium heat, toast the slivered almonds for about 2 to 4 minutes until golden brown. Remove from heat and let cool.
  3. In the bowl with the dressing, add sliced celery stalks, scallions, mint leaves, and most of the toasted almonds. Gently stir with a rubber spatula until coated.
  4. Garnish with reserved almonds and additional mint before serving.
