  • 3 ripe bananas (sliced)
  • ½ cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. For the crust: Mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a springform pan and bake for 8 minutes; set aside to cool.
  3. Lower oven temperature to 325°F (163°C). Beat cream cheese until smooth; add sugar gradually, then eggs one at a time. Mix in sour cream and vanilla until combined.
  4. Pour filling over cooled crust. Bake for 55-65 minutes until edges are set but center jiggles slightly. Turn off oven and cool with door ajar for an hour.
  5. Chill in the fridge for at least 4 hours or overnight.
  6. For caramelized bananas: Melt butter with brown sugar in a skillet over medium heat, add banana slices, cooking until golden.
  7. Prepare glaze by melting butter with brown sugar, stirring in vanilla extract; simmer briefly.
  8. Assemble by placing caramelized bananas on top of chilled cheesecake and drizzling with glaze before serving.
