  • 8 boneless skinless chicken thighs
  • 10 cloves of garlic
  • 10 pieces of fresh ginger
  • 700 ml chicken stock
  • 3 tablespoons kecap manis
  • 5 spring onions
  • 30 ml neutral oil
  • 1 tablespoon sesame oil
  • 500 g cooked rice
  • Cucumber for serving

Instructions

  1. Prepare the broth: Bash ginger and garlic; add them to a saucepan with chicken stock. Simmer on medium heat while adding sliced spring onion whites.
  2. Marinate the chicken: In a mixing bowl, combine chicken thighs with kecap manis, salt, and ground white pepper. Set aside.
  3. Cook spring onions: Heat neutral oil in a frying pan; add spring onion greens until wilted. Transfer to a bowl and mix in sesame oil and toasted sesame seeds.
  4. Cook the chicken: In the same frying pan over medium-high heat, cook marinated chicken thighs for 7-8 minutes until golden brown. Add water from marinade until reduced to a thick sauce.
  5. Prepare cucumber & rice: Slice cucumber and lightly season; reheat cooked rice as per package instructions.
  6. Assemble & serve: Divide rice into bowls, ladle hot broth over it, top with sliced chicken and cucumber. Drizzle sambal before serving.
