  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions

  1. Cut the chicken into bite-sized pieces and season lightly with salt and pepper.
  2. In a mixing bowl, combine the soy sauce, sesame oil, garlic, ginger, and brown sugar. Add the chicken and marinate for 10 minutes.
  3. Rinse the jasmine rice under cold water until clear. Bring 2 cups of water to a boil in a saucepan, add the rice, cover, and simmer for about 15 minutes.
  4. Heat oil in a large pot over medium-high heat; sauté the marinated chicken until caramelised.
  5. Pour in chicken broth and rice vinegar; bring to a boil then reduce heat to simmer.
  6. Slowly add cornstarch mixture to thicken; simmer for an additional 5 minutes.
  7. Serve the chicken over jasmine rice and garnish with sliced green onions.
