Ingredients

  • 1 cup short-grain sushi rice
  • 1.5 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 oz imitation crab meat
  • 1 medium cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • Sriracha (optional)

Instructions

  1. Rinse 1 cup of short-grain sushi rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed rice with 1.5 cups of water and cook until tender according to package instructions.
  3. Once cooked, transfer the rice to a mixing bowl and stir in 3 tablespoons of rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt while still warm.
  4. Slice 1 medium cucumber and dice 1 ripe avocado.
  5. In serving bowls, layer the seasoned rice at the bottom followed by sliced cucumber, diced avocado, and 4 ounces of imitation crab meat.
  6. Drizzle with 2 tablespoons of low-sodium soy sauce and add sriracha if desired.
