  • 12 oz Smoked Sausage (Andouille or Kielbasa)
  • 1 cup Long-grain White Rice
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 medium Onion
  • 3 cloves Garlic
  • 1½ cups Chicken Broth
  • 2 tbsp Cajun Seasoning
  • 1 tbsp Olive Oil
  • Salt and Pepper (to taste)
  • Fresh Parsley (optional, for garnish)
  • Green Onions (optional, for garnish)
  • Hot Sauce (optional, for serving)

Instructions

  1. Slice the smoked sausage into ½-inch rounds, dice the bell peppers and onion, and mince the garlic. Rinse the rice under cold water until clear.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook for about 5 minutes until browned.
  3. Add diced onion, red bell pepper, green bell pepper, and minced garlic to the skillet. Sauté for another 3-4 minutes until vegetables are tender.
  4. Stir in the rinsed rice and chicken broth, mixing well.
  5. Season with Cajun seasoning, salt, and pepper to taste. Bring to a boil.
  6. Reduce heat to low, cover, and let simmer for about 15-20 minutes until rice is cooked through.
  7. Fluff with a fork before serving hot.
