  • 3 lbs red potatoes, cut in bite sized pieces
  • 34 celery stalks, chopped
  • 6 hard boiled eggs, chopped
  • 2 green onions, sliced
  • 1½ tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 1/3 c Mayo
  • 1/3 c sour cream
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • 1/2 tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Boil the red potatoes in salted water for 12-15 minutes until fork-tender. Drain and let cool.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, and spices to create the dressing.
  3. Once the potatoes are cool enough to handle, combine them with chopped eggs, celery, and green onions in a large bowl. Toss with two-thirds of the dressing until well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving. Toss with remaining dressing before serving and garnish with parsley and paprika.
