  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cups heavy cream (or half and half)
  • 3 tablespoons flour
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies
  • ¾ cup cheddar jack cheese (shredded)
  • Cajun seasoning
  • Olive oil
  • 3 tablespoons butter
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon mustard powder
  • 1 teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 2 teaspoons lime juice
  • Fresh cilantro (roughly chopped)

Instructions

  1. Season the chicken breasts with Cajun seasoning on both sides. Heat olive oil in a skillet over medium heat and cook the chicken for about 5-7 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Add flour to create a roux, then gradually whisk in chicken broth and heavy cream.
  3. Stir in honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, red pepper flakes, and remaining Cajun seasoning. Simmer until thickened.
  4. Add diced tomatoes and shredded cheese to the sauce, stir until melted. Return the cooked chicken to the skillet and let it soak up flavors for an additional 5 minutes.
  5. Drizzle lime juice over the dish before serving and garnish with fresh cilantro.
