  • 6 cups mixed greens
  • 1 red bell pepper, cored, seeded, and diced
  • 1 yellow bell pepper, cored, seeded, and diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, pitted, peeled, and diced
  • 1/2 cup corn kernels
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1 cup mayonnaise
  • 1/2 cup buttermilk
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

Instructions

  1. Pat chicken dry and pound to 1/2-inch thickness. Season with Cajun spices.
  2. Heat olive oil in a skillet and cook the chicken for 5-7 minutes on each side until fully cooked.
  3. Allow the chicken to rest before slicing.
  4. In a bowl, whisk together the dressing ingredients: mayonnaise, buttermilk, Cajun seasoning, lemon juice, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.
  5. In a large bowl, combine mixed greens and chopped vegetables; toss gently.
