  • 1 medium head of green cabbage, chopped
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups vegetable broth
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Optional: 1 cup sliced sausage (chicken or turkey)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion, green bell pepper, and garlic until softened (about 5 minutes).
  2. Add chopped cabbage and cook until wilted (about 5 minutes).
  3. If using sausage, add it now and cook until browned.
  4. Stir in rice, diced tomatoes, vegetable broth, Cajun seasoning, salt, and pepper.
  5. Bring to a boil; reduce heat to low. Cover and simmer for 25 minutes until rice is tender.
  6. Remove from heat and let sit for 5 minutes before fluffing with a fork.
  7. Garnish with sliced green onions before serving.
