  • 12 oz Brussels sprouts (trimmed)
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 4 slices cooked turkey (chopped)
  • 1 cup pecans (toasted)
  • 1/2 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine trimmed Brussels sprouts with olive oil and salt; toss until evenly coated.
  3. Spread the Brussels sprouts on a baking sheet in a single layer. Roast for about 20 minutes until golden brown and tender, stirring halfway through.
  4. Remove from the oven and sprinkle chopped turkey and toasted pecans over the Brussels sprouts. Add dried cranberries.
  5. Toss gently to combine all ingredients on the baking sheet, then serve warm.
