  • 5 tablespoons unsalted butter (softened, for filling)
  • 3/4 cup light brown sugar (packed, for filling)
  • 1 teaspoon cinnamon (for filling)
  • 2 tablespoons cake flour (for filling)
  • 1 cup powdered sugar (for glaze)
  • 1/2 teaspoon cinnamon (for glaze)
  • 3 tablespoons unsalted butter (melted and cooled, for glaze)
  • 2 1/2 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a stand mixer, cream together room-temperature butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla; mix until combined.
  3. In another bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually add dry ingredients to wet mixture; mix until combined. Chill dough for one hour.
  4. For the filling, combine softened butter, brown sugar, cinnamon, and cake flour in a bowl until smooth.
  5. Scoop chilled dough into portions, create wells for the filling, place a small ball of filling inside each well, and seal with more dough.
  6. Bake for 11–13 minutes until lightly golden brown; cool on wire racks.
  7. Prepare glaze by mixing powdered sugar, cinnamon, melted butter, and milk until smooth; drizzle over cooled cookies.
