  • 1/4 tsp baking soda

  • 1 cup (200 g) granulated white sugar
  • 1/2 cup (110 g) brown sugar
  • 3 eggs, at room temperature
  • 1 tbsp vanilla
  • 1 cup (240 ml) buttermilk, at room temperature
  • 9 tbsp (126 g) unsalted butter (for caramel filling)
  • 3/4 cup (165 g) brown sugar (for caramel filling)
  • 1 cup (240 ml) heavy cream (for caramel filling)
  • 1 1/2 tsp vanilla (for caramel filling)
  • 1/4 tsp salt (for caramel filling)
  • 8 oz (226 g) cream cheese, cold (for frosting)
  • 2 cups (260 g) powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a saucepan over medium heat, melt 2 cups of unsalted butter until browned and fragrant, then set aside.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Combine both sugars with the browned butter in another bowl until well mixed.
  5. Add eggs one at a time to the sugar mixture, followed by vanilla extract.
  6. Gradually mix in the dry ingredients alternately with buttermilk until just combined.
  7. Divide the batter evenly between prepared pans and bake for about 36 minutes or until a toothpick comes out clean.
  8. For the caramel filling, melt additional butter and brown sugar in a saucepan; gradually stir in heavy cream until smooth.
  9. Let cakes cool before frosting with cream cheese frosting.
