  • 3 tbsp butter
  • 1 tbsp corn syrup

  2. Blend chopped raw carrots, eggs, and vegetable oil until smooth.
  3. Add sugar to the blender and mix until combined.
  4. In a mixing bowl, whisk together flour, baking powder, and salt.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Bake for 30–40 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool before adding the warm chocolate glaze made from melted chocolate chips, butter, and corn syrup.
