  • ¼ cup fruit juice (non-alcoholic)
  • 2 tablespoons extra virgin olive oil
  • 4 salmon filets (about pounds)
  • 2 medium peaches (pitted and sliced)
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons garlic (minced)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a medium bowl, mix peach preserves, fruit juice, olive oil, soy sauce, vinegar, mustard, garlic, salt, black pepper, and red pepper flakes to create the marinade.
  2. Marinate the salmon in half of the mixture for at least 30 minutes.
  3. Preheat the oven to 375°F.
  4. Heat olive oil in an oven-safe skillet over medium-high heat and sear the salmon skin-side up for 2-3 minutes.
  5. Flip the salmon and add sliced peaches; cook for another 2-3 minutes.
  6. Pour reserved marinade over the salmon and peaches.
  7. Bake in the preheated oven for 12-15 minutes until salmon reaches an internal temperature of 145°F.
