  • 1/2 teaspoon white vinegar
  • 1/4 cup ice cold water
  • 3/4 cup cold unsalted butter cut into pieces
  • 1 large egg white lightly beaten
  • 3 large eggs
  • 1 can (15 ounces) pure canned pumpkin
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 3/4 cup pure maple syrup
  • 1 cup heavy cream
  • 3 tablespoons granulated sugar

Instructions

  1. Prepare the crust by mixing flour, sugar, salt, and cold butter until crumbly. Add beaten egg and vinegar; gradually mix in ice water. Chill for 30 minutes.
  2. Roll out the dough, fit into a pie dish, and brush with beaten egg white.
  3. Preheat oven to 350°F (175°C). Combine eggs, pumpkin, sour cream, vanilla, sugar, and spices in a bowl; pour into the crust.
  4. Bake for about 70 minutes until set. Cool completely.
  5. Sprinkle sugar over the top and use a kitchen torch to caramelize.
  6. Whip cream with maple syrup for topping.
