Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 8 oz cream cheese (softened)
  • 3/4 cup sugar
  • 2 tsp vanilla extract
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups fresh blueberries (tossed in flour)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9×5-inch loaf pans.
  2. In a large mixing bowl, cream together softened butter and cream cheese until smooth. Gradually add sugar and mix until well combined.
  3. Add vanilla extract and eggs one at a time, mixing until fully incorporated.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually blend into the wet mixture.
  5. Gently fold in the floured blueberries to prevent them from sinking during baking.
  6. Divide the batter between the prepared loaf pans and bake for approximately 50 minutes or until a toothpick comes out clean.
  7. Allow to cool slightly in pans before transferring to a wire rack for complete cooling.
