  • 230 g Caster Sugar
  • 10 g Blood Orange Zest
  • 170 g Whole Eggs
  • 115 g Double / Heavy Cream
  • 185 g Cake Flour
  • 3 g Baking Powder
  • 3 g Fine Sea Salt
  • 60 g Neutral Oil (Vegetable or Groundnut)
  • 50 g Blood Orange Juice
  • 50 g Sugar (for syrup)
  • Lemon Juice (to taste)
  • Blood Orange Juice (to taste)
  • 3 g Powdered Vegan gelatin
  • 18 g Cold Water
  • 100 g Whole Milk
  • 135 g Dark Chocolate, Melted
  • 10 g Glucose
  • 200 g Double/Heavy Cream (for topping)
  • 100 g Icing/Powdered Sugar (for glaze)

Instructions

  1. Preheat your oven to 160C (320F) and prepare a 2lb loaf tin by greasing it and dusting with flour.
  2. In a bowl, combine caster sugar and blood orange zest, massaging them together for one minute.
  3. Add whole eggs to the mixture and whisk until thickened and pale using a stand mixer or electric whisk.
  4. Incorporate double cream into the egg mixture until fully combined.
  5. Sift in cake flour, baking powder, and salt; gently mix until just combined.
  6. Add neutral oil and stir until you achieve a smooth batter.
  7. Pour into the prepared loaf tin, then bake for 65-75 minutes or until a skewer inserted comes out clean.
  8. While baking, make the syrup by boiling sugar with lemon juice and blood orange juice until dissolved; set aside.
  9. After baking, poke holes in the cake and drizzle with syrup; wrap tightly in cling film and chill overnight.
