  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Line a square baking pan with parchment paper.
  3. In a mixing bowl, combine chocolate cookie crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
  4. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Pour the cheesecake mixture over the crust and smooth it out evenly. Bake for 30-35 minutes until set but slightly jiggly in the center.
  6. Allow to cool completely before refrigerating for at least 4 hours or overnight. Top with cherry pie filling before serving.
